Keeping eggs safe in storage containers

1. Storage container

  1. Always store eggs in a clean, dry, food grade container or trays.
  2. Do not store eggs in their original paper-based tray given by the vendor.
  3. Besides the tray use a separate box with proper ventilation to store eggs in trays so that rodents cannot spoil them.

2. Temperature for storage of eggs

  1. Store eggs in a cool, shaded and well-ventilated place.
  2. Avoid heat, direct sunlight or moisture

3. Hygiene during storage of eggs

  1. Do not wash eggs before storage. It will make them prone to contamination.
  2. Store eggs separately from cooked foods and green vegetables to avoid cross-contamination.
  3. Always wash hands after handling raw eggs.
  4. Never reuse utensils that have touched raw eggs without cleaning.

4. Discarding eggs – during receipt and while cooking

  1. If the shells are cracked or broken.
  2. There is foul smell, or egg contents appear discoloured.
  3. Eggs float when they are placed in water.

5. Labelling the tray during receipt of eggs

  1. Label the tray with purchase date
  2. Use FIFO method for consumption of eggs.

6. Proper position of keeping the eggs in a container

  1. The blunt end should be on the top and the pointed end should be kept down. This ensures keeping the freshness for a longer period.
