Principle of FIFO

What is FIFO?

FIFO stands for “First in, First Out”. It is a simple method to ensure that older stock of food is used before newer stock, helping prevent wastage, spoilage and food borne illness.

Why is FIFO important in creches?

  1. Children are vulnerable to food poisoning from stale or expired items.
  2. Using FIFO reduces the risk of serving spoiled or infested food.
  3. Ensures that nutritional quality is preserved by using fresh ingredients.
  4. Prevents food spoilage and wastage, ensures children get fresh and safe food and saves cost and maintains hygiene.

Do’s

  1. Label every item with date: When receiving new food items write the date of purchase or date opened on the packet or container using a marker.
  2. Store older stock in front: Place the older items in the front or on top of shelves. Keep newer items at the back or bottom, so the older ones are used first.
  3. Check before use: Before cooking check which packet was opened earlier. Always use the item with the oldest first.
  4. Use clean, covered containers. Transfer loose food materials into labelled, covered containers. Do not mix new stock into containers with old stock unless old stock is used up.
  5. Inspect for spoilage: If the older food looks spoiled, do not use it, discard safely. Report to the supervisor if large quantities are spoiled.
  6. Maintaining a simple register.
  7. Write down food items received and dates in a basic register. It helps keep track of when food came in and when to use it.
  8. Label every food item with the date of purchase or opening.
  9. Always use the oldest stock first; check the label before using.
  10. Train caregivers to rotate items regularly on FIFO basis, especially for- grains, pulses, flour, spices and oils, ORS and packaged food.

Don’ts

  1. Use food just because it’s on the top or nearer.
  2. Mix old and new food blindly.
  3. Forget to check labels or condition of food before cooking.
